9 cups pecans (just over 2 pounds)
1 cup sugar
1 stick butter
1 teaspoon salt
1 teaspoon vanilla extract
2 egg whites
1 1/2 powered sugar
- Heat oven to 350 degrees. Melt butter in oven on a 12 by 15 baking sheet. Add pecans and dredge in melted butter.
- In separate bowl combine sugar, salt, vanilla and egg whites. Drizzle over pecans and stir to coat.
- Bake for 40 minutes. Every 10 minutes stir up mixture.
- Place powered sugar in large container with lid. Add pecans and shake/stir to coat.
- Remove and cool.
